Recipe for Monday the 24th of January: Couscous with Thai vegetables and curry burger

Ingredients (serves 4):

  • 200 g couscous
  • 250 ml boiling water
  • 2 tbsp mild olive oil
  • 4 Mister Kitchen's v-burgers Thai curry
  • 1 lime
  • 200 g AH vegetable yoghurt soy unsweetened
  • 50 g pumpkin seeds
  • 600 g Thai stir-fry vegetables

Step 1:
Put the couscous in a bowl and pour the water over it. Cover and leave to stand for 10 min.

Step 2:
In the meantime, heat half the oil in a non-stick frying pan and fry the curry burgers in it for 5 min each side over a low heat.

Step 3:
Meanwhile, halve the lime and squeeze out the fruit. In a bowl, mix the vegetable variation of yoghurt with the lime juice.

Step 4: 
Heat a frying pan without oil or butter and toast the pumpkin seeds for 2 min. over medium-high heat until golden brown.

Step 5: 
Meanwhile, heat the rest of the oil in a wok or frying pan, add the wok vegetables and stir-fry for 5 min. Season to taste with salt and pepper.

Step 6: 
Loosen the couscous with a fork and mix with the wok vegetables.

Step 7: 
Divide the vegetable couscous and burgers between the plates. Serve with the vegetable variation of yoghurt and sprinkle with the pumpkin seeds.
